Recipe: No Crust Quiche

I've made this twice recently and it's SO good! I wanted to make a quiche or egg dish that was healthy, was substantial enough to fill up Garner and could save for a day or two. I found some recipes on the internet (what did we do, before Google and Pinterest?) and combined a few to come up with this... 

 

Ingredients

3 cups of veggies - can be whatever is in your fridge. We used mushrooms, bell peppers, onions and kale. 

1 cup of meat (optional) - we used chicken apple sausage but you could also use bacon, ham or regular sausage. 

Olive oil 

2 tablespoons of thyme 

Salt 

Pepper 

6 eggs - can substitute for egg whites if you like

1/2 cup of milk - I used almond milk but whole milk or whipping cream would make it fluffier 

1 1/2 cups of grated/shredded cheese - can be any kind you like. We used mozzarella and cheddar. 

Avocado (optional, but makes everything better) 

 

Instructions

Preheat oven to 350 degrees. 

Saute veggies (and meat if using) in olive oil, thyme, salt and pepper. Make sure they are cooked, soft and have plenty of seasoning. 

In a small bowl beat the eggs. Add in milk, a dash of salt and a little freshly ground pepper. 

Pour veggies (and meat if using) into bottom of a pie pan. Top with a layer of grated cheese. Add egg mixture. Top with another layer of cheese. 

Bake for 40 minutes. Let cool for 10 minutes. Slice and serve with avocado on top.
